White Cake
Serves 8 meal pieces or 16 dessert
Ready in: 60 minutes

A light "white" cake good as a base for many toppings and fillings.

Ingredients

  • 1 1/4 cups unbleached flour
  • 1 1/2 cups whole wheat flour
  • 2 Tbsp Ener-G Baking Powder
  • 3/4 cup raw sugar (or 3/4 tsp Stevia + 3 Tbsp flour)
  • 1/3 cup olive oil or unsweetened applesauce
  • 2 Tbsp vanilla
  • 1 cup soy milk 
  • 3/4 cup water
  • 1/4 tsp almond extract

Directions

Preheat oven to 350°F. Prepare pan of your choice (two 8" rounds work the BEST, or 9 x 13). Combine dry ingredients and whisk well. Combine wet ingredients. Quickly stir wet into dry and pour into pan. Bake at 350°F for 30-35 min. Let cool before turning out onto rack.

Tips 'n' Techniques

This cake freezes ok, but may go a bit crumbly. Adjust stevia to taste!

Nutrition (per 16) using applesauce: 116 calories; 0.5g total fat; 8.8mg sodium; 73.5mg potassium; 24.9g carbohydrates; 1.5g fiber; 9.7g sugar; 2.7g protein.

Nutrition using oil (per 16 serving): 153.4 calories; 5g total fat; 0mg cholesterol; 8.7mg sodium; 69.8mg potassium; 24.3g carbohydrates; 1.5g fiber; 9.7g sugar; 2.7g protein.

Nutrition (per 16) using stevia & applesauce: 87 calories; 0.5g total fat; 8.8mg sodium; 75.4mg potassium; 17g carbohydrates; 1.6g fiber; 0.4g sugar; 2.9g protein.
