Sweet Potato Salad (p.
43)
This is my latest favourite. I always think I
will leave some for later but then I can't help but gobble it all up!
Great with leafy greens +/or rolled up in a nori sheet.
Ingredients
- 1/2 cup dry aramé - soaked in water for 15 mins (so
do that first) then drain.
- 1 cup sweet potato - grated
- 1/2 red pepper - seeded + diced
Mix all this up in a bowl then make up the following dressing:
- 1/2 an avocado
- juice of 1/2 a lemon
- 1 tbsp. of tahini
- 1/2 tsp. paprika + coriander powder
- sprinkle of dried chillies or some fresh chillie - to
your liking
- sprinkle of sea salt + pepper
- 1 clove of garlic
Blend up the dressing + mix it in with the other stuff. |
