Sweet Potato Salad (p. 43)

This is my latest favourite. I always think I will leave some for later but then I can't help but gobble it all up!
Great with leafy greens +/or rolled up in a nori sheet.

Ingredients

  • 1/2 cup dry aramé - soaked in water for 15 mins (so do that first) then drain.
  • 1 cup sweet potato - grated
  • 1/2 red pepper - seeded + diced

Mix all this up in a bowl then make up the following dressing:

  • 1/2 an avocado
  • juice of 1/2 a lemon
  • 1 tbsp. of tahini
  • 1/2 tsp. paprika + coriander powder
  • sprinkle of dried chillies or some fresh chillie - to your liking
  • sprinkle of sea salt + pepper
  • 1 clove of garlic

Blend up the dressing + mix it in with the other stuff.
