Pasta with Peanut Sauce (p. 104)
Serves 8
Peanut sauce takes just minutes to prepare and
gives pasta a whole new personality.
Serve this dish with an assortment of lightly
steamed vegetables for a complete and satisfying meal.
Ingredients
- 8 ounces uncooked pasta
- 1/2 cup peanut butter
- 1 cup hot water
- 2 tablespoons soy sauce
- 2 tablespoons seasoned rice vinegar
- 1 tablespoon sugar or other sweetener
- 2 garlic cloves, minced
- 1/2 teaspoon ginger powder
- 1/4 teaspoon red pepper flakes or a pinch of cayenne
- 3 green onions including tops, finely chopped
Directions
Cook the pasta in rapidly boiling water until it is just
tender. Rinse and drain.
While the pasta is cooking, combine the peanut butter, water,
soy sauce, vinegar, sugar, garlic, ginger, and red pepper flakes in a saucepan
and whisk until smooth. Heat gently until slightly thickened. Add more water if
the sauce becomes too thick.
Toss the cooked pasta with the sauce and sprinkle with chopped
green onions. Serve immediately.
