Pasta with Peanut Sauce

Peanut sauce takes just minutes to prepare and gives pasta a whole new personality. Serve this dish with an assortment of lightly steamed vegetables for a complete and satisfying meal.

Ingredients

  • 8 ounces uncooked pasta
  • 1/2 cup peanut butter
  • 1 cup hot water
  • 2 tablespoons soy sauce
  • 2 tablespoons seasoned rice vinegar
  • 1 tablespoon sugar or other sweetener
  • 2 garlic cloves, minced
  • 1/2 teaspoon ginger powder
  • 1/4 teaspoon red pepper flakes or a pinch of cayenne
  • 3 green onions including tops, finely chopped

Directions

Step 1

Cook the pasta in rapidly boiling water until it is just tender. Rinse and drain.

Step 2

While the pasta is cooking, combine the peanut butter, water, soy sauce, vinegar, sugar, garlic, ginger, and red pepper flakes in a saucepan and whisk until smooth. Heat gently until slightly thickened. Add more water if the sauce becomes too thick.

Step 3

Toss the cooked pasta with the sauce and sprinkle with chopped green onions.

Serve immediately.
