Oven-Roasted Sweet Potatoes
Yield: 8 to 10 servings

This is a tasty alternative to traditional fries. You can mix them with Oven-Roasted Potato Wedges (page 86).

Ingredients

  • 4 pounds sweet potatoes
  • 2 tablespoons oil
  • 1 teaspoon salt

Directions

  1. Preheat the oven to 350°F.

  2. Peel the sweet potatoes, if you prefer, and cut into wedges lengthwise. Place the wedges in a bowl.

  3. Mix the oil and salt, and pour over the potato wedges. Toss all together until the wedges are evenly coated.

  4. Spread the wedges on a baking sheet, and bake for 15 minutes. Flip them over and bake for another 10 to 15 minutes until they are tender and browned.
