Nuthin Fancy Chile

Ingredients

  • 1 can black beans
  • 1 can pinto beans
  • 1 can kidney beans
  • 1 can corn
  • 1 vegan bouillon cube (flavor is up to you, I like non-chicken)
  • 1 tbsp brown sugar
  • 1 or 2 cans tomato sauce (the unseasoned kind), depending on how thick you like your chile
  • 1 small onion, minced
  • Chile pepper
  • Garlic
  • Italian seasoning

Directions

Using a little bit of oil or vegan butter, brown onion slightly. Add the first seven ingredients and stir until well blended. Warm over medium heat and add spices to taste. I'm a little lost here since I never measure my spices, I just toss and taste. I like my chile pretty warm so I'd estimate that I use about 3 tsp of chile powder, 1 tbsp Italian seasoning, and 2 tsp of garlic.
Simmer about 20 min covered with the lid slightly off just to prevent the sauce from splattering.
Serve with corn chips or cornbread.
