Gooey, Chewy Peanut Butter Bars (p. 160)
Yield: approximately 50 balls (serve 2 each)
No cooking is involved in this recipe. You won't
be able to keep these in stock!
Ingredients
- 1 1/2 pounds peanut butter *
- 9 ounces cold cereal, ground **
- 2 ounces wheat germ
- 3 ounces maple syrup
- 5 ounces raisins
- 4 ounces chopped nuts
- 8 ounces toasted sesame seeds
* Note: Either smooth or chunky peanut butter works
with this recipe (we actually prefer the chunky); if peanut butter has
separated, stir before using. If available, you might want to experiment with
almond or hazelnut butter. If the mixture is too thick, add more peanut butter;
if it is too thin, add more cereal.
** Note: Use ground flakes, puffs or granola, or a
mixture of several cereals.
Directions
Place peanut butter in a mixing bowl. Add cereal, wheat
germ, maple syrup, raisins, and chopped nuts. Combine until stiff (but not
dry). Mixture can be rolled into balls (1/2 ounce each) with the seeds
pressed into a sheet pan and topped with the seeds. Refrigerate for at least
1 hour before serving.
