Divine Cashew Mushroom Gravy (p. 78)
yields 2-3 cups
Ingredients
- 3 cloves garlic, minced
- 2 small onions, diced
- 2 C. mushrooms, sliced
- 2 C. water
- 3 T. nutritional yeast
- 1 t. garlic powder
- 1 t. onion powder
- 3 1/2 T. cashew butter
- 2 T. tamari or substitute
- 1/2 t. sea salt
- 1 T. arrowroot powder
Directions
- In a small sauce pot, sauté garlic and onions, then add
mushrooms and simmer until vegetables are soft.
- In a blender, blend remaining ingredients. Pour mixture
into the pot and simmer, stirring often until the arrowroot thickens the
gravy. Do not boil.
This gravy is the perfect complement for mashed potatoes and
loaves.
