Carob Raisin Peanut Clusters (p. 111)
Makes 2 dozen
- 3 cups non-dairy carob chips
- 1/2 cup raisins
- 1/2 cup shelled peanuts
Melt carob chips in a double boiler over medium heat. Add
raisins and peanuts. Remove pot from stove and mix ingredients together.
Drop by spoonfuls onto a cookie sheet, forming two dozen
clusters. Cool in refrigerator for at least 15 minutes and serve.
Substitute non-dairy dark chocolate chips for carob chips
and/or substitute other dried fruit for the raisins and different nuts for
