ExtraVeganZa by Laura Matthias
An excellent cookbook with well-tested, original and very flavorful recipes. Her creative use of many different grains, legumes, vegetables, nuts and herbs has earned this cookbook a place in my top 10. Some favorite recipes are the Friendly Shepherd's Pie, Vegan Pad Thai, Vegetable Mochi Casserole, Lemon Curried Lentils and Potatoes, Tomato Garbanzo Spinach Soup, and Banana Carob Almond Coconut Muffins.
Veganomicon by Isa Chandra Moskowitz and Terry Hope Romero
Isa and Terry are amazing, innovative vegan chefs. This cookbook is great for both beginner and more advanced vegan cooks. It includes fancier recipes like Eggplant-Potato Moussaka with Pine Nut Cream and simpler recipes like Spaghetti and Beanballs. Some of my favorite recipes are the Pineapple-Cashew-Quinoa stir-fry, Chickpea Cutlets, Fresh Rosemary Focaccia and Chewy Oatmeal Raisin Cookies. Other cookbooks by these authors that I recommend are
Vegan Cupcakes Take Over the World and Vegan Brunch.
Simple Treats by Ellen Abraham
This is my absolute favorite (and most used) vegan dessert cookbook. I love it that the recipes don't use hardened fats and that they taste absolutely wonderful. I've made them for many events and they have been thoroughly grown-up and kid-tested and approved! This cookbook is wheat-free, but I have to admit to substituting barley flour with whole wheat pastry flour most of the time. Some favorite recipes are the Double Fudge Pecan Brownies, Blueberry Muffins, Mint Double Carob Walnut Cookies, Cashew Jam Bites, Gingerbread Cookies and the Raisin-Pecan Scones.
Lorna Sass' Complete Vegetarian Kitchen by Lorna Sass
Lorna Sass is amazing at making flavorful recipes using many different grains, beans, vegetables, nuts and fresh herbs and spices. Not only are her recipes very healthy, but they are also incredibly flavorful. Some of my favorite recipes are Tarragon Risotto with Mushrooms and Leeks, Curried Yellow Split-Pea Soup with Squash and Raisins, Brown Basmati with Cashews and Currants and Curried Cauliflower Stir-fry. I use the Nut Pie Pastry crust almost every pie I bake. Lorna Sass is an expert pressure cooker chef, so many recipes also give directions for making them with a pressure cooker. If you have a pressure cooker, then I also highly recommend her cookbook Great Vegetarian Cooking under Pressure.
Incredibly Delicious by Gentle World
A great cookbook by the staff of
Gentle World. It is one of my most-used cookbooks, which earns it a place in my top 10. It contains both cooked and raw-food recipes, which is great if you want to incorporate more raw food in your diet. Some of my favorite recipes include the Potato Salad, Scalloped Potatoes, Divine Cashew Mushroom Gravy, Greek Spaghetti, Mushroom Eggplant Stroganoff, Penne 'Cheese' Bake, Cashew Carrot Paté, Moroccan Vegetable Stew, Home Fries, Maple Coconut Treats and Basil Pesto Sauce.
The Horizons Cookbook by Rich Landau and Kate Jacoby
A great cookbook by Rich and Kate, a married couple and the chefs and owners of Vedge restaurant, which opened in Philadelphia, as a follow-up of their Horizons restaurant. The recipes are a bit on the fancy side, but definitely not too difficult to make. Some of my favorites are the Atlantic Tofu Gratin, Caribbean Seitan BBQ Wings, Grilled Tofu Salmon with Dill Sauce, Curried Cucumber Rice Salad and Tofu or Seitan & Wild Mushroom Pot Roast.
The Vegan Table by Colleen Patrick-Goudreau
Colleen is a very popular vegan chef. Definitely check out her website The Compassionate Cook. This cookbook includes both simpler and more complicated recipes. Some of my favorites are the Home Fried Potatoes, Potato Leek Soup, Elegantly Simple Stuffed Bell Peppers, African Sweet Potato and Peanut Stew, Decadent Chocolate Truffles and Old-Fashioned Lentil Loaf. Another cookbook by Colleen that I recommend is
The Joy of Vegan Baking.
Nonna's Italian Kitchen by Bryanna Clark Grogan
This is one of my older vegan cookbooks, which has been in my cabinet for many years. It doesn't look as shiny and fancy as some of my newer vegan cookbooks, but it definitely has some good recipes. The Basic Frittata, Cashew Sprinkle and Crepes I make regularly. Some other favorite recipes include Patate in Tegame, Roasted Mushroom Stew, Vegetarian Hot Italian Sausage, Potato Dumplings and Sicilian Bread Pie.
Raw STAR Recipes by Bryan Au
Of all the raw vegan cookbooks in my cabinet, this one is definitely the easiest to use. It doesn't require hours of dehydrating and soaking like some of my other raw cookbooks. The recipes are simple, easy to make and very tasty. If you want to incorporate more raw into your diet, then I definitely recommend this cookbook to you. Some of my favorite recipes are the Waldorf Salad with "Mayo" Dressing, Pasta Alfredo and  Mango "Cheesecake".
Dining with Friends by Priscilla Feral and Lee Hall
This cookbook contains incredibly tasty recipes that have not only become personal favorites, but are also very popular with guests, earning it a place in my top 10. It contains great soup recipes like the Cream of Broccoli Soup, Greek Bean Soup and Carrot and Potato Soup. Some of my other favorite recipes are the Cashew Cream Lasagna, Medley of Roasted Potatoes, Onions and Zucchini, Sesame Green Bean Salad, Lentil Orzo Casserole and Zucchini-Tomato Sauce for Pasta.
