If I could have only two cookbooks, then Veganomicon and Vegan With a Vengeance would be the ones I'd choose. Veganomicon continues the always-reliably-yummy precedent set by Vegan With a Vengeance with almost twice as many scrumptious and easy recipes, such as White Bean Aioli, Tofu Florentine, Bulgur Arugula Cannellini Salad, Escarole with Capers and White Beans, Roasted Butternut Squash with Coriander, Dill-Basmati Rice with Chard and Chickpeas, very nice soups, amazing one-pot meals (Leek and Bean Cassoulet with Biscuits, Seitan Piccata with Olives and Green Beans, Cauliflower Mushroom Potpie with Black Olive Crust), Pasta e Fagioli, Mac Daddy (excellent vegan mac 'n' cheese), and many more. My only complaint is that the waffle recipes tend to stick. The categorized index at the back is handy (for instance, when you need to cook for gluten- sensitive relatives).
This is the best cook book I have ever used-- vegan or not-- every recipe I've made from it is a complete success (even in the eyes of my meat-loving husband). Go buy it now!
