Ellen Abraham:

There are so many reasons to go vegan; the animals, the environment, health, but for me, there was no way that I was going to give up good food OR good taste. I especially adore sweets, I always have. Eating organic, whole foods is and has become really important to me. When I became a vegan consumer, I was always so disappointed in what was available as far as sweet treats were concerned; if it was organic it wasn't vegan, or if it was vegan it wasn't made with ingredients I was crazy about, like hydrogenated oils or refined sugars. The creation of Simple Treats was really for everyone who has a sweet tooth, but in addition to tasting wonderful, they are made with great ingredients, simple to make and you'll feel good about indulging and sharing the vegan love. With respect to all living things, enjoy!

Awesome cookbook! This is a wheat free cookbook and I eat wheat and so substitute wheat flour for all of the barley flour in the recipes, but all of these recipes turn out great.
